Winemaking: The Havens 2012 Cabernet Sauvignon, Oakville is an excellent example of what one can expect from this amazing area for Cabernet Sauvignon. Oakville’s gravelly volcanic soils yield some of the most famous Cabernet Sauvignons in the world. Grown on the eastern hills, near where Oakville Cross Road meets the Silverado Trail, the grapes were picked at perfect ripeness to emphasize fruit and varietal character, without the heat and excessive tannins found in some recent Napa Cabernet Sauvignons. Part of the restraint of this wine is from the Serpentine soils found in this area that slow the growth of the vines. Special rootstocks are required to even grow grapes in the area, but the results are quite satisfactory.

The grapes were picked after a long hang time, but not at having reached an over ripe stage. Fermentation was in 5-ton open top fermenters with the temperature maintained at 82oF. The wine was pressed off 3 days after it went dry, but before the cap fell. The wine was aged in 3 plus year old primarily American, but some French oak barrels for 14 months. The wine was then filtered and bottled. 

Growing Season: The Havens Cabernet Sauvignon Oakville has unique and multidimensional components of the 2012 vintage. The aromas reveal a mix of black cherries, black berries and woodsy-vanilla notes, leading to chocolaty, fruit flavors, with hints of cassis and toast. The mouth feel is bountiful, without overwhelming tannins, and continues into a long linger- ing finish.
